Skip the butter cookies and salsa and it sounds good. But why so much food? Half that would be more than sufficient for a great feed.

First, don’t be nervous. Stick with the recipes you have tried & have been successful. Too much bread, carbs, & sweets for breakfast.
Apple bread
Moms Breakfast Strata
Sausage breakfast Wrap
Butter Cookies
Banana Vegan Muffins
Egg cake
Cinnamon Toast
Apple Sauce
Salsa
Cinnamon Rolls

From your selection, I would make the strata and serve with fresh fruit or fruit salad.
Beverages of choice – coffee, tea, or juice.

Your menu sounds wonderful!
Thanks for the recipes too.
The only thing that I would add to this is something with color like a
bowl of unpeeled sliced seedless orange wedges. They are ready to eat and are wonderful for cleansing the palette after eating the other foods. Cut them up early in the day and refrigerator until serving time.
Have a wonderful breakfast and also do your baking early so you have time to enjoy your guests.

Too much flour based things for me , its very high in carbs and a bit sameish, bread and cakes seem to dominate.

I was going to poast as so many people did that you had an awfully large menu.
Even after narrowing it down you have a Lot of of stuff.
If I were you I would also take out the apple sauce, cinnamon toast, and possibly the apple bread.
Add in some fresh fruit instead f the apple sauce. Melons or a mix of berries, grapes, melons etc…
